To add to their already extensive global network ECOLE DUCASSE will open its culinary doors in Dubai and are looking for talented individuals to join as their Divisional Executive Chef!The RoleReporting to the Business Manager this role will maintain a high level of communication and contact to the Academic Director of Ecole DUCASSE Paris.
The Executive Chef is responsible for the development of Amateur and Professional syllabuses and tuition calendars that meet Ecole Ducasse market position and commercial aspirations.
He she is the driving force to create a dynamic culture of learning ensuring all programme content and delivery are market leading and driving.
He she is responsible to train and lead all instructors to deliver programmes at the exacting standards of Ecole DUCASSE.
They are responsible for the management and delivery of set budgets as well as ensuring all facilities operate to local and Alshaya Group hygiene and safety standards.
The below Key Performance Areas include but are not limited toTeam managementRecruit train and develop the Chef Instructor and support teams Propose the production and evaluation of pedagogical and methodological tools.
Lead the team to ensure that all optimal training conditions are metSchedule leader shifts based on B2C B2B activity also including in schedules.
Technical organization of the workshopsWith marketing ensure a thorough understanding of the local market requirements With the Ducasse Paris team localise international programmes as required.
Lead the development of market specific programmes for both Amateur Professional Work with other functions to ensure conformity of programs quality of supplies safety hygiene.
Constantly evaluate the training content and delivery to improve and innovate programmes.Manage food costs in line with planned production costs Management and delivery of agreed KPIsManage and control the maintenance of the premises and equipmentParticipation in the development of the image of the SchoolRepresent and promote the School in local and international markets as required.
Set up and conduct external and internal demonstrations to promote the Ecole DUCASSE Brand.Performance Management Deliver financial targets as agreed in the annual business planEnsure Student satisfaction surveys are at or above the agreed targets QualificationsMust have BTS or Bachelor Hospitality Management DegreeAdvanced Culinary Arts DiplomaExperience510 years in a HeadExecutive Chef positions preferably in fine dining 5year minimum experience in culinary and baking training for all levels2 to 3 years experience in a similar position environment is preferred.
