Key Job Responsibilities
To supervise, direct and participate where necessary in the preparation cooking of all food items.
To ensure that all purchasing is placed with the Executive Chef.
To receive stock, checking thoroughly for quantity and quality and to report to the Executive chef any subs-standard items.
To ensure an efficient system for storage of all food items required.
To check quality of food before being sent to customers and the quality of food is consistent
To ensure that over / under preparation of production of food is kept to a minimum.
To ensure that all use by dates are checked to ensure they have not been exceeded, before using.
To report any food items that has exceeded their use by date to Executive Chef.
To ensure that portion control of all dishes is kept constant.
To conduct training with all Kitchen staffs predetermined by the Hotel and to appraise and rmend to the Executive Chef accordingly on the performance of all Kitchen brigade.
To ensure the proper use of all equipment and training kitchen staff in accordance with specifications.
To report any failures / problems to the Maintenance Department.
Assist the Duty Manager in any tasks outlined / detailed by him / her.
To ensure that all departmental staffs have Food Handlers Certificate with HACCP Training Recorded
Reporting of Injuries, Disease and Dangerous Occurrences in line withpany Policy and procedures
High school diploma or equivalent
At least two years experience as Sushi in a 4 and 5 star hotel
Able to work well along with others / team player
Possess a positive and enthusiastic attitude
Must be flexible and multi-tasking ability
