Our client is a well known name in catering industry and as an Executive pastry Chef you will be responsible for the Culinary and Operational aspects of this unique dessert and cake company with clients in the 5 F B market the highend catering market airline segment as well as supplying retail clients The responsibility entails providing an excellent client experience with innovative New Product Development effective Operational Management and friendly Client Interaction As the Executive Pastry Chef Operations Manager you are responsible for operating the 3750 sq ft pastry facility reporting to the Chief Executive Officer and working closely with Sales Management Business Services Management and Technical Management You will be required to develop new and exciting new products for our customers plan production based on orders and sales forecasts and run the operations with your team of chefs and operators efficiently and cost effective Specifically you will be responsible for performing the following tasks to the highest standards Running the pastry production operations Maintaining a capable team of chefs and operators Maintain effective NPD in conjunction with the customers Ensure excellent quality and consistency throughout the dessert offerings Maintaining the highest level of innovation and creativity to the product offering Supervise and coordinate all pastry and dessert preparation activities and presentations Plan production to facilitate client requirements Manage food cost in line with agreed budgets and client expectations Ensure compliance with Food Hygiene Health and Safety and Municipal regulations REQUIREMENTS Trained under recognized European Executive Pastry Chefs A minimum of 6 years as a Head Pastry Chef at 5star hotels and or highend dessert and cake suppliers Ability to have a handsoff approach to managing the Operational Team by delegating the production tasks to the Operational Team Members after training Ability to ensure a consistent quality control functionality on the production floor Experience with high volume food production and the planning thereof Approaches pastry in an innovative and creative way Strong supervisory skills Strong employee development skills Positive can do attitude Good communication skills written as well as verbal Experienced in maintaining HACCP programs Experienced in maintaining Quality Management System such as BRC and or ISO Experience with preparing and maintaining Product Specifications Experience with preparing and maintaining Methods of Prep Recipe Cards for products to be produced Committed to delivering a high level of customer service Excellent grooming standards Excellent planning and organizing skills Dedicated to the delivery of exceptional service and continuous improvement It would be advantageous in this position for you to demonstrate the following capabilities and distinctions Relevant qualifications for role Relevant references of work experience with successful Chefs in the worldwide Pastry Scene Proficiency with computers and computer programs including Microsoft Word Excel Outlook Proficiency with ERP systems
