Job Role : F&B SUPERVISOR

Scope Of Work :

  • The F&B Supervisor is to provide effective and efficientsupervision and delivery of all Food & Beverage operations;the highest level of guest service;
  • are cost effective; and meetbudgeted targets.

    JobResponsibilities :

    1. To assistF&B Management with the delivery of F&B service inaccordance with departmental standards and procedures.

    2. Assists the Outlet / Restaurant Manager in development andadministration of controls for all phases of the outlet in aneconomical and profitable manner while maintaining establishedstandards.

    3. Responsible for managing the time keepingrecords for all team members and plans duty schedules according toforecasted occupancy as required.

    4. Assists theOutlet / Restaurant Manager with the day-to-day operation of theoutlet in accordance with established policies and procedures,acting on their behalf in their absence.

    5. Interactswith guests in each of the outlets to solicit comments.

    6. Communicates with F&B management any difficulties, guestcomments and other relevant information.

    7. Todemonstrate the 12-Service Excellence Basics and ensure the wholeof the F&B Department continually follows the same.

    8. Obtains all information available for upcoming year(occupancy, forecast, trends, reservations, festive periods,etc.)

    9. Keeps updated with new products in themarket.

    HRResponsibilities :

    10. Providesperformance evaluations regarding colleague probation periods,annual performance reviews, promotion or transfer consideration andsalary reviews.

    11. Regularly provides feedback toF&B Management on colleague performance through personalobservations.

    12. Assists F&B Management toestablish comprehensive training programmes for theDepartment.

    13. Evaluates departmental trainingsessions.

    14. Personally conducts training for allF&B colleagues as required.

    15. Attends allhotel trainings as required.

    16. Adheres to all HR andHotel policy and procedures.

    17. Continually strives toimprove self; knowledge and skills.

    FinancialResponsibilities :

    18. Ensure that properbilling procedures are followed in the Outlets.

    19. Toassist F&B Management with the implementation of controlmeasures to cut down SOE breakage to reduce costs.

    20.With the Outlet / Restaurant Manager(s) ensures that Up Sellingtechniques are actively used in order to maximize all salesopportunities to drive revenues.

    21. Check and analysedaily covers, average check and sale.

    22. Review themonthly Profit and Loss statement with F&BManagement.

    23. Actively participates in energy savingand recycling initiatives, and ensures all F&B colleaguesfollow the same.

    GeneralResponsibilities :

    24. Attends allrequired management meetings.

    25. Conducts dailybriefing in the absence of the Outlet / Restaurant Manager.

    26. Assists the Outlet / Restaurant Manager(s) to ensure thatthe appropriate standards of conduct, dress, hygiene, uniform andappearance are maintained for all colleagues within the F&BDepartment.

    27. Assists F&B Management toensure that the hotel FSMS Program is strictly implemented,including the cleanliness of all restaurants and bars, personalhygiene standards for all food handlers and monthly Hygiene Audits.

    28.Strictly adheres to the hotel's Policy on Confidentialityand Ethics.

    29. To ensure self and all F&Bdepartment colleagues actively participate in all EHSMSrequirements.

    30. To carry out any additional tasks andprojects as requested by the Director of Food &Beverage / Food & Beverage Manager or delegate.JobRequirements
