Responsibilities : Areas of Responsibility
a.To develop recipes that align with the brand image & taste preferences of the targeted market. ?
b.To ensure consistent results of balanced flavored dishes. ?
c.To guarantee cost efficiency (based on pre-agreed suppliers provided ?by The Snackaholics). ?
d.To suggest specific products to be used for each recipe. ?
a.To develop a food tasting survey. ?
b.To test these recipes amongst The Snackaholic team twice as well ?as the targeted market (10 pax) once to check acceptance & receive feedback for areas of development & make adjustments accordingly. ?
3.Development of Recipe Cards & Manual ?
a. To have one master document which entails : images of each final product, the ingredients list & their measurements per unit & per 10 units, preparation method, garnish suggestions (if any), & storage & transportation guidelines.
4. Staff Training
a.To offer a 1 week on the ground training program with a minimum of 4 hours per day. ?
b.To showcase & oversee how to prepare & present dishes both in the central kitchen & in the food truck in a timely manner. ?
c.To train on food safely & hygiene procedures such as food preparation & storage protocols.
Stages of Developments
Stage 1 : Define with The Snackaholic team areas of the menu that require development (sandwich fillings, desserts, pastry, bread) & the supplier list for the sensitive products (bread / flour, meats & chicken, etc.)
Stage 2 : Develop menu items
Stage 3 : The Snackaholic team to review & provide feedback
Stage 4 : Amend menu items
Stage 6 : Develop recipes in-house based on pre-agreed food supplier lists (especially for meats or chicken)
Stage 7 : Test recipes in the central kitchen & in the food truck to insure consistency of results
Stage 8 : Test recipes with The Snackaholics team & receive feedback
Stage 9 : Make adjustments
Stage 11 : Train the staff
