About the Job :
An opportunity has a risen for a colleague to join our Pastry team in Jumeirah Zabeel Saray, as a Cake Artist. The main duties and responsibilities of this role :
To ensure that all outlet reports, schedules, standard recipes, dessert presentation photographs and correspondence are completed in liaison with the Pastry Chef in an accurate and punctual manner.
To have a complete understanding of, and adhere to the company’s policy relating to fire, hygiene and safety.
To ensure that operating and kitchen equipment is maintained to a good standard with minimum breakage.
Check incoming produce, ensuring that all food merchandise is in accordance with order sheets, receiving records and purchasing specifications.
To maximize colleague productivity and morale and consistently maintain discipline following hotel guidelines and local legislation.
Assists in the building of an efficient team of colleagues by taking an active interest in their welfare, safety, training and development.
Interacts with management of other departments within areas of responsibility and develops solid working relationships with them.
Another important role for the Junior Sous Chef is to ensure that colleagues follow strict hygiene rules and maintain what we have already achieved with HACCP throughout the resort.
Responsible for the audit requirements for HACCP and Dubai Municipality as needed.
Identifies Market needs and trends in terms of food for both hotel guests and local market, and Monitors and analyses the menus and products of competitive restaurants.
In charge of the production of all cakes and special cake orders for Latitude Creations.
Oversees the delivery of the cakes to the quest as per requirement.
Plans and implements effective Cake promotions in co-ordination with the Chefs office.
Any other duties as may reasonably be requested by the management.
Attends meetings and briefings as instructed by Culinary Department and in the absence of Pastry Chef
To train kitchen colleagues according to the monthly training plan, JD Power report comment cards , hygiene reports and any other highlighted areas for improvement / development that would benefit the department.
To report accidents and sickness in the log Book and to report any such incidents immediately to the Executive Chef / Executive Sous Chef on a daily basis.
Ensures that all the required food transfer are completed to the appropriate outlet / department
Cooperate with F&B Outlet Managers for all Special Cake Orders
Lead Customized Cakes and Customized Amenities for the entire resort
About you :
The ideal candidate for this position will have the following experience and qualifications :
College or Culinary graduate
Great people management required.
Strong leadership and organization skills with a hands on approach
Bring a basic computer knowledge such as MS Word, MS Excel, MS Power Point, MS Outlook and able to work with hotel ordering system
Fit & Healthy
Good communication and presentation skills
Proficient in the English language
Recognized culinary diploma is mandatory and essential
Minimum of 5 years in the culinary profession with a minimum of 1 year in management position
Able to handle Multiple tasks as well as busy banqueting & volume operation
Good knowledge of job related skills
Have good administration skills and computer literate
Provides great drive of passion
Specialized on Customized Cakes and Chocolate Decoration
Specialize in decorative fruit, vegetable and ice carving, Styrofoam displays, chocolate and cake decoration
Caramel decoration would have a definite advantage
Work in a multicultural environment
Very good strong leadership and organizational skills
Knowledge of HACCP as well as general health & safety in the workplace
Able to control cost and wastage
Must be proactive and lead by example
Have a high level of creativity and be quality focused
Through knowledge of various foods and their preparations
Gives direction and be responsible for the implementation of plans
