What you will be doing :

  • Actively interact with Guests at their table.
  • Conduct daily shift briefings to culinary Colleagues.
  • Assist the Executive Chef with inventories, pricing, cost controls, requisitioning and issuing supplies and equipment for food production, reports and costs menus.
  • Promote a fun, professional, and disciplined work environment.
  • Lead by example using Accor’s Mission, Vision and Values.
  • Always act with positivity and professionalism when collaborating with all other Culinary Colleagues and Leaders.
  • Support, coach, lead and motivate culinary Colleagues.
  • Actively share ideas, opinions, and suggestions in weekly meetings.
  • Ensure proper weekly and annual vacation scheduling of all Culinary Colleagues while maintaining Fairmont Dubai’s quality standards.
  • Promote Health and Safety and ensure proper hygiene as per Dubai Municipality at all times.
  • Ensure all grooming, spot check, and temperature control sheets are filled as required.
  • Complete all Colleague reviews.
  • Maintain consistent on the job training sessions for Culinary Colleagues.
  • Liaise daily with Outlet Managers to keep open lines of communication and Guest feedback.
  • Maintain and improve all food preparations and presentations.
  • Maintain and improve Fairmont standards for timely delivery of food orders.
  • Strive to achieve and surpass JD Power targets for Food Quality & Presentation.
  • Your experience and skills include :

  • Previous experience as Sous Chef preferred
  • Strong interpersonal and problem solving abilities
  • Capable of working under high pressure
  • Highly responsible and reliable
  • Ability to work cohesively as part of a team
  • Ability to focus attention on Guest needs, remaining calm and courteous at all times
