Job Role : Junior Sous Chef Arabic Pastry
Toassist the Sous Chef in leading & managing all culinaryactivities within the Arabic Pastry section, ensuring compliancewith set standards in quality, hygiene, productivity &guest satisfaction.
Promote cross sectional effective communicationwith positive team spirit. Lead product improvement initiatives forsmooth facility operation.
Assist the SousChef to manage productivity to meet growth in line with budget KPItargets
Ensure food produced is of asufficient quality & quantity to deliver guest satisfactionas judged by meal tasting panels & statistical analysis ofguest feedback
Ensure KPI targets on food costpercentage are achieved & waste management is controlledthroughout product life cycle
Monitor the workprocesses of direct & indirect reports ensuring maximumproductivity & coordination of production across relevantsections
Liaise with EHS department to ensurethe levels of food hygiene within the operation are at least met orexceed regulatory & guest requirements
Ensure that the resources of the Arabic Pastry sectionsare utilized in a way that supports the development of the cateringfacility to achieve any additional revenue streams
Together with the Sous Chef promote on the job training& coaching of all subordinates with focus on improvement ofrelevant culinary skills to enhance guest satisfactionlevels
Assist Sous Chef to maintain accuraterecipe data to allow precise costing calculations & ensureapproved recipes are followed throughout Arabic PastrySections
Coordinate with relevant departmentsto ensure effective communication & support of logisticalstructure in delivery of end product
Formalcatering certificate from recognized internationalinstitutes
Minimum 4 years’international experience in 5 star hotels or fine diningestablishments
Able to coach &training staff in culinary arts
Consistentlyaware of latest trends in culinary world & new kitchentechnologies
Detail orientated with excellentcomputer skills & English communication skills.
