Job Description

The desired candidate should be trained by a Japanese Sushi Master & preferably have worked in authentic Japanese Sushi restaurants.

The duties of the chef will include the following :

  • Deep knowledge of authentic Japanese Cuisine.
  • Professionally cut different types of fish.
  • Prepare the different types of rolls typically found in a Japanese restaurant.
  • Prepare the sushi rice and Japanese sauces.
  • Select fresh and superior ingredients.
  • Design appealing plates of sushi.
  • Prepare Tempura and other forms of Japanese cuisine foods
  • Prepare ingredients for cooking, including portioning, chopping, and storing food.
  • Weigh, measure, and mix ingredients according to recipes or personal judgment. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
  • Ensure proper portion, arrangement, and food garnish to be served. Serve food in proper portions onto proper receptacle.
  • Use kitchen tools safely and appropriately.
  • Wash and disinfect sushi bar, tables, tools, knives, and equipment.
  • Check and ensure the correctness of the temperature of appliances and food.
  • Forecast sales and prepare the backups accordingly with minimal wastage rates.
  • Report to the Head Chef the reordering of all food ingredients based on forecasted sales.
  • Ensure that all events are managed efficiently according to the established concept statements and adhere to the Restaurant's Policies and Procedures.
  • Monitor service and food production standards in the sushi bar. Coordinate with the Managers, to take corrective action when necessary.
  • Frequently verify that only fresh products are used in food preparation.
  • Test food and be demanding and critical when it comes to food quality.
  • Work closely with the Managers to ensure that hygiene standards are maintained and that operating equipment is cared for to maximize its useful life and to minimize breakage.
  • Be trained and updated on Japanese styles of cuisines.
  • Search with the Managers for the best Japanese products to offer in our outlets.
  • Ensure that food is thoughtfully sourced and carefully served.
  • Maintain positive guest and colleague interactions with good working relationships.
  • Assist in proactively managing costs based on key performance indicators.
  • Job Type / Category The Sushi chef will be responsible for engaging in all operations of Sushi Counter including designing new menu items.

    Required Education, Skills and Qualifications

  • The desired candidate should have a culinary school education and MUST be trained by a Japanese Sushi Master.
  • Preferably have worked in authentic Japanese Sushi restaurants.
  • Minimum 2 years of experience
