About the role :

An exciting role has arisen for a talented Chef de Cuisine to join The Hide kitchen Team .The main purpose of this position is to assist the Executive Chef and Executive Sous Chefs in the daily operation of The Hide Restaurant and as the Chef de Cuisine, you are fully responsible for ensuring the smooth operation of the kitchen.

Your key duties will include :

  • Assisting the Executive Chef / Executive Sous Chef in the supervision of all colleagues engaged in the kitchen.
  • Attending daily meetings with the Executive Chef / Executive Sous Chef and all other Senior Chefs.
  • Holding meetings with colleagues to discuss what has been carried out in the Chef’s meeting and any other issues.
  • Establishing culinary standards for the speciality of each kitchen which may include banqueting.
  • Planning menus and compiling recipes for food tasting to be approved by the Executive Chef and or the Executive Sous Chef.
  • Inspecting daily all food stores and refrigerated areas and suggesting, where necessary, correct storage methods to comply with Health and Safety regulations.
  • Checking any spoilage and ensuring regular turnover of food items.
  • Checking on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.
  • During service periods, to personally run the hot plate and assist when needed and to ensure that the presentation as well as quality of the food is in accordance with the established standards.
  • Conducting training and thorough briefing on the correct usage of kitchen equipment and machinery and to check that this is carried out in the correct manner by all kitchen colleagues.
  • About you :

    In order to be considered for this role you will show that you have a culinary qualification from a recognised institution and you must possess an Internationally approved Food Safety Certificate.

    You should be able to demonstrate at least five years experience of running a kitchen in a five star hotel or a fine dining restaurant.

    As well as possessing the appropriate technical skills, you will have a passion for and a proven track record of producing the highest quality Steakhouse / Grill room cuisine.

    With the ability to develop menus and set standard recipes you will also be self motivated and willing to share your expert knowledge with the team.

    You will understand all the commercial aspects of a business and be able to work with budgets.

    You must also have a good command of the English language (verbal and written). Experience of working in a multicultural environment is highly desirable and proficient IT skills are essential.
