Job Summary / Purpose :

Italian Chef (Pizzaiolo) is responsible for overall kitchen operations of the signature Italian restaurant offering authentic Italian cuisine in a modern and vibrant setting.

Key Responsibilities :

  • Responsible for the control and preparation of all items connected with Italian restaurant.
  • Develops and create memorable experience to the diners by introducing new menu cycle.
  • Participates in creating special projects, themes, festivals by conceptualizing and personally making decoration pieces for display.
  • Controls quality of produced product by overseeing preparation and maintenance of recipe cards.
  • Regularly reviews existing menus and cycles with Head Chef and EAM- F&B.
  • Takes responsibility for ordering specialty items and for controlling food cost & labor cost for the Sorrento kitchen.
  • Directly involved in food cost forecasting and control of Italian kitchen.
  • Displays strong support to promotional and marketing campaigns.
  • Models the practice and encourages staff to use the guiding principles in day-to-day interactions.
  • Ensures smooth operation in the Kitchen area and proper products control for higher profitability yields.
  • Ensures the highest level of food safety following the Shangri-La’s Food Safety and local Municipality guidelines.
  • Provides supervision, training and constructive feedback to the team.
  • Handles guest feedback with regards to quality / variety of food served.
  • Requirements

  • Graduate / preferable holder of diploma in Hospitality.
  • 7 years of experience in similar set up and at least 2 years of experience as Sous Chef in managing high-end Italian restaurant.
  • Has skill set of traditional Italian Style, handmade pasta and pizza. Participating in the preparation of hot and / or cold food within the Italian kitchen.
  • Guest orientated, excellent communication skills, interpersonal skills, team-building skills and eye for detail.
  • Has the passion towards quality and creativity for new modern presentations of Italian Cuisine.
  • Knowledgeable in Food Safety and HACCP Guidelines.
  • Italian National Preferred.
