Supervise and control the section so as to provide authentic cuisine, maintaining quality standard and specifies food cost
Ensure that the presentation, quality and quantity of food is according to the Hotel standards
Develop and maintain standard authentic recipes
Control spoilage and pilferage
Train Chefs to produce authentic food
Assist in planning of outlet promotions
Ensure that physical aspects of all kitchen areas, cold rooms and equipment are well maintained and in good order.
Ensure that all food, hygiene and sanitary standards are well practiced by all food handlers.
Ensure adequacy of supplies at the cooking stations
Put effort in optimizing the cooking process with attention to speed and quality
Conduct quarterly appraisals with direct reports
Perform related duties and special projects and menus as assigned Candidate Profile :
Bachelor’s degree / Diploma in food production
Knowledge of all food standard procedures, quality presentation, service and products
Good English communication skills
Minimum of 5 years’ experience in Japanese cuisine, Sushi
Ability to multitask and work efficiently under pressure
Knowledge of food trends and special seasonal food
This position requires full mobility, continuous movement and the ability to lift and / or carry up to 25 pounds
