Under the general guidance andsupervision of Executive Chef and Sous Chef, the Senior Chef dePartie will be partly responsible for and the management of theInternational cuisine section of the kitchen.
This includes theline staffs that are associated with the section.
Perform all necessary tasks to accommodate excellentperformance according to the Standard Operating Policies andProcedures (SOPP).
Prepares / directs thepreparation of all international food items
Check the quality of raw or cooked food products toensure that standards are met.
Estimateamounts of required supplies, for menu ingredients and operationalsupplies and equipment.
Assist in implementingthe HACCP Standards of Service and hygiene throughout the kitchen,assuring that all staff adheres to the processes.
Assists in the management of the day-to-day operation ofthe kitchen (coordinate food production schedules and ensurehighest level of food quality, taste and presentation).
Participate in actual food preparation and produce foodat a consistently high level and quality during busyperiods.
Control food cost by assisting intraining kitchen staff on the proper methods of food preparationand handling.
In conjunction with theExecutive Chef, establish goals for the kitchen anticipate andresolve problems concerning all facets of the kitchen.
Take responsibility for ensuring that the s kitchen,stores, and kitchen operation adheres to HACCP guidelines inregards to food handling, preparation and health andhygiene.
Order or requisition food or othersupplies needed to ensure an efficient kitchenoperation.
In conjunction with Executive Chef,develop menus & create and ensure adherence to recipes andproduct specifications.
Coordinate thetraining of kitchen staff on all new menus.
Maintain effective communication within the kitchen; beresponsive to staff suggestions and concerns and work to resolveproblems.
Complete daily food orders basedupon scheduled events and projected levels of business.
Conduct regular inspections of the entirekitchen / dishwashing areas and coolers and promptly act to correctdeficiencies found during inspection.
Monitorsanitation practices to ensure that employees follow standards andregulations.
Attend mandatory meetingsincluding divisional meetings, executive meetings, staff meetings,etc.
Keep work area clean andorganized.
Demonstrate positive leadershipcharacteristics which inspire Team Members to meet and exceedstandards.
Minimumof 4 Years experience as aCDP in a high volume, fast pace, qualityhotel or private household.
Good workingknowledge of accepted sanitation standards and healthcodes.
Basic mathematical skills necessary tounderstand recipes, measurements, requisition amounts and portionsizes.
Ability to read, write and understandthe English language in order to complete requisitions read recipesand communicates with other employees and managers.
Sufficient manual dexterity of hand in order to use allkitchen equipment, i.e. knives, spoons, spatulas, tongs, slicers,etc.
Ability to perform duties in confinedspaces.
Ability to perform duties withinextreme temperature ranges.
Passion for food -someone who enjoys the process of food preparation and creatingmenus
A good sense of business; to beefficient and cost-effective
