We have an exciting opportunity foryou to join our Culinary team as our Chef De Cuisine, to head theKitchen operations of our Concept Outlet Stills .

Thesuccessful candidate will be under the supervision of the Executive Chef andwill be responsible to manage the Stills kitchen operations achieving businessobjectives through customer focused service delivery.

Key Responsibilities

  • Develop new menu concepts; includes conceptualization, testing, and costing new menu items.Maintain updated and accurate recipes and costing of all dishes prepared and sold in assigned area of responsibility.
  • Oversee methods of preparation, portion sizes, and timeliness of food preparation; control food usage to minimize waste.
  • PEOPLE

  • Supervise activities of assigned staff, communicate goals, and assign / schedule work.Communicate and enforce policies and procedures.
  • Promote teamwork and quality service through daily communication andcoordination with other departments.
  • Recommend and initiate disciplinary or other staffing / human resource-relatedactions in accordance with company rules and policies.
  • Assist with employee selection, training anddevelopment, and performance coaching.

    GUEST EXPERIENCE

  • Interact with outside contacts :
  • Guests to ensure their total satisfaction
  • Vendors to order supplies and equipment and ensure best prices and quality
  • HACCP team ensure safety and hygiene compliance
  • RESPONSIBLEBUSINESS

  • Inspect the cleanliness of the line floor and all kitchen stations.Maintain and strictly abide by proper storage procedures and state sanitation and health regulations.
  • Notify the Maintenance Department of any needed repairs.

  • Reviewthe following day’s menus and complete requisitions for food and suppliesneeded from various storerooms; maintain inventory control procedures.
  • Determining the minimum and maximum stocks of all food, material and equipment.

  • Maintainand enforce procedures to (1) ensure the security and proper storage of foodand beverage products, kitchen inventory and equipment, (2) replenish supplies,inventory, uniforms, etc.
  • in a timely and efficient manner, and (3) to minimizewaste and control costs.

    Ideally, you should have anextensive experience in Western cuisine as well as two to three years ofexperience as a Junior Sous-

    Chef in a 4 to 5 star hotel or restaurant;preferably with International and UAE exposure.

  • In addition, the candidate shouldhavestrong management skills in a multicultural and dynamic environment;provenknowledge of food cost control & HACCP regulations;
  • and passionate aboutachieving guest satisfaction through creative culinary offerings.
