opening hotels. The main duties and responsibilities of this role are as follow :
Establish and implement a loss prevention system to maintain breakages and losses of operating equipment to the minimum and report on trends and issues that can be resolved by implementing best practices, improved process, etc.
Maintains record of breakages of each outlet and furnish a monthly summary of recorded breakages to all outlets in order to increase staff awareness on the value of operating equipment and prevent future losses.
Organizes and controls quarterly inventory of all Food & Beverage operating equipment’s with all outlet Managers, to maintain equipment par stocks of individual outlets.
Monitor the flow of china, glass, silver, stainless steel and other service ware, making sure that the adequate supplies are always on hand during operation.
Conduct regular spot checks on the Food & Beverage related areas to ensure that the hygiene and Sanitizations are maintained.
Monitor the stewarding team leaders to ensure that they perform their duties within the established policies and procedures as well as the Food & Beverage manual to sustain the required level of products and services quality.
Inspect the cleanliness of the back of house areas including receiving, kitchens, steward storerooms and dish rooms to maintain adherence to the hotel and municipality rules of sanitation, safety and physical appearance.
Conduct regular checks on culinary equipment’s and other equipment functionality and report malfunctions to the Engineering department to ensure adequate equipment is available at all times and properly maintained.
Conduct regular meetings and shift briefings to keep colleagues informed of policies and procedure, special events, and guest comments to ensure that colleagues are aware of the relevance and importance of their activities, and how do they contribute to the department objectives.
Manage the day-to-day operations providing guidance, encouraging teamwork and facilitating related professional work processes in order to achieve high performance standards and liaise with internal and external parties at the appropriate levels to ensure smooth flow of operations.
Ensure compliance to all relevant Health, Safety and Environment management procedures and controls within a defined area of activity so that Jumeirah Group provides world class and luxurious hospitality services to its guests.
Recommend some improvements to departmental policy, implement approved departmental policies, processes and procedures, and provide instructions to subordinates and monitor their adherence so that work is carried out in a controlled and consistent manner while delivering a quality service to guests and maintaining standards of excellence.
About you : In order to be considered for this role, you will have gained a Bachelor Degree of hospitality from an international well known university and will possess a minimum of 6 years of experience in relevant field and a minimum of 2 years’ experience as a Chief Steward or Back of House Manager in 5 star luxury hotel environment.
You will also have to demonstrate he following :
Experience in managing of large volume operations.
Very good knowledge of the F&B processes and systems.
Strong customer service orientation.
Knowledge in HACCP.
Working with multi-cultural teams
