  • Under theassistance of the executive chef co-ordinate the preparation of the menus andannual budget and work to achieve the budget by monitoring andcontrolling the departmental operations,considering revenue and expenditure.
  • On an ongoingbasis, control and analyze departmental costs to ensure performance againstbudget; implementing corrective measures where necessary to produce positivebusiness results.
  • Effectivelymanage staffing costs by preparing efficient work schedules in line with legalrequirements
  • PEOPLE :

  • Recruit in linewith company guidelines.
  • Prepare detailedinduction programmers’ for new staff.
  • Maintain a comprehensive,current and guest focused set of departmental standards and procedures and oversee their implementation.
  • Ensure trainingneeds analysis of your departmental staff is carried out and trainingprogrammers’ are designed and implemented to meet needs.
  • Actively work atdeveloping your staff and identify high potentials.
  • Maintaintraining records for all direct reports and ensure they do the same for theirstaff.
  • Conductprobation and formal performance appraisal in line with company guidelines.
  • Coach, counseland discipline staff, providing constructive feedback to enhance performance.
  • Approve leaverequests after considering peaks and troughs in the business.
  • Regularlycommunicate with staff to maintain good relation.
  • Comply with theCompany’s Corporate Code of Conduct.
  • Familiarizeyourself with the company values and model desired behaviors
  • Perform tasks asdirected by the Manager in pursuit of the achievement of business goals.

  • Demonstrateservice attributes in accordance with industry expectations and companystandards including :
  • ØBeing attentive to guests requests

    ØAccurately and promptly fulfilling guests’ requests.

    ØAnticipate guest’s needs.

    ØMaintain a high level of knowledge which affects theguest experience.

    ØDemonstrating a service’ attitude.

    ØTaking appropriate action to resolve guest complaints.

  • Appreciate thedynamic nature of the Hotel industry and extend these service attributes to allinternal customers.

  • Demonstrateunderstanding and awareness of all company policies and procedures relating toHealth, Hygiene and Fire Life Safety and ensure your direct reports do thesame.
  • Familiarizeyourself with emergency and evacuation procedures.
  • Ensure allsecurity incidents, accidents and near misses are logged investigated andrectified to prevent future catastrophes.

    Monitors effectiveness of workflow & Sequence ofService during service periods and provides hands-on support as and whenrequired.

    To action changes when needed. Closely monitor themarket list order to ensure compliance with the food cost margin

    Monitors customer satisfaction and respond to customerfeedback and complaints ensuring procedures for Complaint Handling arefollowed.

    Advises the F&B management of any improvementsneeded in relation to restaurants operation

    Conducts performance evaluation of colleagues,training of colleagues, guidance, coaching and counselling of colleagues.Ensures that colleagues are aware of the relevance and importance of theiractivities and how they contribute to the department objectives detailed in theF&B Department Performance Plan.

    Determines the necessary competence for colleagues andprovide training or other actions to satisfy these needs.

    Provides constant coaching, counselling and disciplineto colleagues to ensure their capability to meet the needs of the customer andthe organisation.

    Ensures manning and competence level of selectedcolleagues is sufficient for the department to meet the needs of theorganisation and customer.

    In order to be consideredfor this role you should hold a recognised hotel diploma and at least 1 yearexperience working in the same position within a 5* hotel, detailed knowledgeof food technical skills is essential for this role as well as a proven trackrecord in launching new concepts and promotions, training and developing staff.

    It is also essential that you have a good command of the English language(verbal and written) and knowledge.
